Overview
Plant antioxidants are secondary metabolites and other plant-derived constituents that neutralize reactive oxygen species and inhibit oxidative reactions, serving both the plant's own defense against abiotic and biotic stress and as dietary sources of Antioxidant Activity in humans. The major classes include phenolic acids, flavonoids, tannins, carotenoids, and ascorbate, whose radical-scavenging capacity derives from electron- or hydrogen-donating hydroxyl and conjugated structures, complemented by enzymatic systems such as superoxide dismutase and peroxidases. Measured Antioxidant Activity in plant material correlates strongly with total phenolic and flavonoid content but is sensitive to species, plant part, extraction solvent, and pH, making standardized assessment important for comparing sources. Research in this area characterizes the antioxidant and phytochemical profiles of medicinal plants, herbs, fruits, and aerial parts and tubers, examines how solvent and pH modify extracted activity, isolates antioxidant flavonoids, evaluates antioxidant enzymes and capacity in plant tissues, and investigates the antioxidant response associated with metal and abiotic stress tolerance. The redox potential of phytochemicals and their interaction with cellular targets is also addressed.
