Overview
Antioxidants are molecules that inhibit oxidation by neutralizing reactive oxygen species and free radicals, unstable molecules that can damage cells, proteins, lipids, and DNA. By donating electrons or scavenging radicals, antioxidants help limit oxidative stress, a state implicated in aging and in chronic conditions such as cardiovascular disease, cancer, and neurodegeneration. They include endogenous defenses such as enzymes and dietary compounds such as vitamins C and E, carotenoids, and a wide range of plant-derived polyphenols and flavonoids. Research published in this area extensively characterizes Antioxidant Activity in natural products and the methods used to measure it.
