Overview

Carbohydrates are organic compounds composed of carbon, hydrogen, and oxygen, classically conforming to the empirical formula Cn(H2O)n and structurally defined as polyhydroxy aldehydes or ketones and their derivatives. They are organized by degree of polymerization into monosaccharides such as glucose and fructose, disaccharides such as sucrose and lactose, oligosaccharides, and polysaccharides such as starch, cellulose, and glycogen. The stereochemistry of their multiple chiral centers, their ring-chain tautomerism, and the regiochemistry and anomeric configuration of glycosidic bonds determine their three-dimensional shape, physical properties, and biological recognition. Carbohydrates serve as primary energy stores and structural components and participate in cell signaling through glycoconjugates. Their chemistry encompasses glycosylation reactions, formation of N-glycosyl amides and oxazolines, and protecting-group strategies that enable selective synthesis of defined oligosaccharides, as well as analytical determination of composition and glycemic properties relevant to nutrition and digestion. Structural characterization relies on chromatography, mass spectrometry, and nuclear magnetic resonance.
