Overview

Acids are chemical species defined by their capacity to donate protons, according to the Bronsted-Lowry model, or to accept an electron pair, according to the Lewis model. They react with bases in neutralization reactions to yield salts and water and are characterized by parameters such as acid dissociation constant, pKa, and the resulting equilibrium concentration of hydrogen ions that establishes pH. Acid strength, polyprotic behavior, and buffering arise from the position of these dissociation equilibria, which underpin the quantitative formulation of acid-base and isohydric systems. The chemistry of acids spans inorganic mineral acids used as reagents and catalysts and the vast family of organic carboxylic acids, including amino acids and fatty acids, whose acidic groups govern reactivity, solubility, and biological function. Fatty acids such as the omega-3 docosahexaenoic and eicosapentaenoic acids are studied for their physicochemical composition and physiological effects, while amino acids are quantified by iodometric and other titrimetric methods and feature in peptide synthesis and the pathogenesis of metabolic disease. New Developments in Chemistry publishes peer-reviewed research on acids and their applications, including amino acid determination and derivatization, fatty acid composition and supplementation, acid-base equilibrium analysis, and nucleic acid techniques.
