Overview
Food hygiene refers to the practices and conditions necessary to ensure food safety throughout preparation, handling, and storage, preventing contamination and foodborne illness. Research published in the International Journal of Nutrition examines food hygiene through multiple interconnected dimensions, particularly in resource-limited settings. Studies have investigated complementary food hygiene practices among caregivers in Ethiopia, revealing critical gaps in safe food preparation for young children. The journal has documented associations between inadequate hygiene and diarrheal disease prevalence in children under five years, as well as connections between environmental sanitation, hygienic practices, and nutritional outcomes in vulnerable populations across South Asia and sub-Saharan Africa. Research has also addressed the microbiological safety of processed food products and the prevalence of foodborne pathogens including Campylobacter species in clinical populations. Additionally, published work explores how waterborne diseases linked to poor sanitation affect community health, and examines intestinal parasitic infections among school-aged children where hygiene infrastructure is limited. This body of research underscores that food hygiene extends beyond individual behavior to encompass broader environmental conditions, healthcare system integration, and municipal decision-making, all of which directly influence child growth, maternal health, and population-level nutritional status.
