Overview
Biochemical and molecular nutrition examines how nutrients and bioactive food components interact with biological systems at the cellular and molecular level, including their effects on metabolism, gene expression, and physiological function. Research published in the International Journal of Nutrition addresses diverse aspects of this field, ranging from fundamental enzyme characterization to population-level nutritional biochemistry and emerging methodologies. Published studies have investigated the purification and properties of plant-derived enzymes with potential nutritional applications, explored the molecular mechanisms linking diet to epigenetic modifications, and examined anti-inflammatory biomarkers associated with probiotic bacteria in fermented foods. The journal has also featured research on biochemical and hematological indicators of micronutrient status in specific populations, including iron biomarkers in African communities and micronutrient deficiencies among children in relation to socioeconomic factors. Practical dimensions of biochemical nutrition research appear in studies addressing field implementation of cold-chain systems for preserving biological samples during nutritional assessments and digital tools for dietary data collection. This work matters because understanding nutrition at the biochemical and molecular level enables more precise identification of nutritional deficiencies, informs targeted dietary interventions, and reveals mechanisms through which diet influences health outcomes across diverse populations and settings.
