Overview

Food chemistry is the study of the chemical composition and physical properties of food and of the reactions and interactions that food components undergo during production, processing, storage, and consumption. It examines proteins, carbohydrates, fats, vitamins, minerals, enzymes, and additives, and how these interact to determine a food's safety, nutritional value, flavour, colour, and stability.
