Overview
Carbohydrate metabolism is the collection of biochemical processes by which the body breaks down, builds up, and converts carbohydrates to meet its energy and structural needs. Dietary carbohydrates are digested into simple sugars, principally glucose, which can be oxidized through glycolysis and the citric acid cycle to generate energy, stored as glycogen in the liver and muscle, or converted into fatty acids and other molecules. Hormones such as insulin and glucagon tightly regulate these pathways to keep blood glucose within a healthy range, and disturbances in this regulation underlie conditions such as diabetes and metabolic syndrome. Research within this journal's scope connects carbohydrate metabolism to nutrition and health, including how nutrients influence diabetes, the use of continuous glucose monitoring to track real-time glucose dynamics, and dietary patterns that affect energy balance and weight. These studies illustrate how the handling of glucose and other carbohydrates shapes both normal physiology and metabolic disease. This page gathers peer-reviewed, open-access research relevant to carbohydrate metabolism and the regulation of glucose and energy in the body.
