Overview

Poultry refers to domesticated birds raised for meat and eggs, principally chickens, but also turkeys, ducks, and other species, and constitutes a major source of animal protein within global food systems. In Food Science and Hygiene, poultry is studied for its production, product quality, and microbiological and chemical safety, as well as for the bird health and husbandry factors that determine yield and the safety of the resulting food.
