Overview
Animal nutrition and food safety together address the nutritional needs of animals and the safety and quality of the food supply that connects animal production to human health. Animal nutrition examines the nutrient requirements of animals, how feed influences growth, health, and productivity, and how feeding practices affect the quality of animal-derived products. Food safety focuses on ensuring that food is free from contamination and hazards, through monitoring, analysis, and good hygiene practices across the production and handling chain. This peer-reviewed, open-access research collection includes work on the food safety side of this field. Published studies have reviewed liquid chromatography–mass spectrometry (LC-MS) applications in food safety, an analytical approach used to detect contaminants and verify the composition of food, and have investigated complementary food hygiene practices among mothers and caregivers in a community setting. Such research supports the detection of hazards and the promotion of safe food handling, both central to protecting public health.
