Overview
Education is the structured process through which knowledge, skills, values, and attitudes are developed via instruction, training, and experience, and as a field of research it examines how learning occurs and how teaching, curricula, and educational systems can be improved. It encompasses formal schooling, higher and professional education, and health and community education, and it draws on pedagogy, psychology, and evaluation to assess what works. The studies collected here illustrate this breadth, with a strong emphasis on health and nutrition education. Nutrition education features prominently, including its effect when combined with active choice on fruit and vegetable consumption, its influence on body mass index and diet quality in schoolchildren, and comparative dietary education across countries. Health-related education appears in work on adolescent sexuality education among secondary-school teachers and on osteoporosis knowledge among women. Professional and medical education is represented by studies of integrated teaching for medical students and of online platforms for continuing education. The impact of disruption on learning is addressed through analyses of education and training during the COVID-19 pandemic, while determinants of learning appear in work on emotional intelligence and self-efficacy in higher education. Ethical and developmental dimensions extend the scope.
